Waitrose has managed to achieve its zero to landfill target of food waste, 3 months before targeted.
(OPENPRESS) Supermarket chain Waitrose has recently claimed that it has officially achieved its aim of distributing zero food waste to landfill from all of its 280 stores across the United Kingdom. The target was originally set to be completed by the end of 2012, but they have managed to complete it with 3 months left.
They used a number of ways to meet their zero to landfill, one of these ways was making sure that all their food waste that was unfit for use was sent to a number of anaerobic digestion plants, this helps break down the food using organic microorganisms to break down the food with the absence of oxygen. Using this technique is a great way to recycle all unwanted food that is unable to use, it is also an extremely cost effective way of dealing with food waste, with a number of anaerobic digestion plants opening up in recent years, it helps offer commercial companies the option to use this technique. There are many beneficial advantages of using anaerobic digestion, one being that there is a large amount of nitrogen found in plants in a more readily available form. The anaerobic digestion plants can offer tailor made services which can suit the needs of your company, so it does not matter how much waste needs to be distributed they can accommodate it.
Waitrose, which is part of the John Lewis Partnership, also used their damaged fruit and vegetables in the stores partner dining rooms, this allows a large number of partially damaged goods that were not fit for the front of house to still be put to good use.
Waitrose recycling and waste manager, Mike Walters, said "Of course it's not in our interest to produce any food waste at all, which is why we work hard to minimise it in the first instance. Inevitably we generate some surplus food, and where it is not fit to be donated to the local community." This is why that any food that has been made in surplus will be donated to local communities.
